Sweet Potato Crust "Pizza" Recipe

During the fall/winter months Andrew and I feel so lucky that Kale is in season in Germany, that it takes over our meal planning. We will literally have kale salads EVERY DAY for lunch and dinner. (seriously, for those that don't believe this, ask our coworkers). And believe me, i'm not complaining, it is my absolute favorite thing to eat... AND I just feel good after... its filling, tasty and super healthy.

Anyway, a few weeks ago Andrew mentioned something like "maybe we should add some different recipes into the mix?" ... at first - I was offended. "you DON't want kale salad at all meals?!" Then... I realized, maybe he's right. Challenge accepted. 

So I got researching. My coworker & fellow 'health food fanatic' shared this link with me: "Healthy recipes for the month of February". And I was in love, so many interesting different recipes to try. 

Its easy to fall into the routine of making the same easy dinners that you know you love over and over when you come home from work. So I challenged myself to try at least one new recipe each week. 

I sent this link over to Andrew and asked him to choose one for our Friday night dinner, naturally he chose the one that had "pizza" in the title. Now I will warn you - its not like a true pizza crust, its just sliced sweet potatoes. BUT - its DELICIOUS and pretty guilt free. 

 

SWEET POTATO CRUST "PIZZA" RECIPE:

INGREDIENTS: 

CRUST:

  • 4 large (or 6 medium) sweet potatoes
  • 1 tbsp olive oil
  • 1 large garlic clove, crushed
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper

TOPPINGS:

  • 1 small red onion, sliced
  • 1 red bell pepper, sliced
  • 1 cup small broccoli florets
  • 1/2 cup cherry tomatoes
  • 1 lb ground turkey (or beef)
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper
  • 3/4 cup tomato sauce
  • 2.5 oz mozzarella cheese, shredded
  • 1 cup kale (save for the end)
 

DIRECTIONS:

  1. Preheat oven at 230 degrees C (450 degrees F) and drizzle olive oil on baking sheet tray. (we usually first cover our baking sheets with foil to help with clean up)
  2. Wash sweet potatoes. Cut off the ends. (no need to peel) Using a sharp knife (or a mandoline) cut each sweet potato lengthwise into 1/8 of an inch thick slices. (mine were a bit of a disaster & different sizes, but still delicious)
  3. Add the sweet potatoes to a large bowl, drizzle with olive oil & add garlic, smoked paprika, salt & pepper. Mix gently to coat. 
  4. Lay the potato slices in a single layer on the baking sheet. Make sure they're overlapping a bit. (see below)
  5. Next - add the veggies! Layer on any of the veggies you want, they are going to cook at the same time that your cooking your 'crust'. (but save the sauce, cheese & meat for later). Add a bit of salt & pepper on top and place in the oven on the middle rack. Bake for about 20 minutes turning halfway through. Then broil on high for 10 more minutes. 

6. While the crust & veggies are in the oven, start cooking the meat. In a large non-stick skillet on medium heat add the turkey and cook for about 10 minutes or until cooked through. Add the oregano & salt and mix.

7. Remove the pizza crust from the oven and add the tomato sauce evenly on top. Sprinkle the ground turkey all over the top and then cover with mozzarella cheese. Return to the oven and broil on high for about 10 minutes or until the cheese is bubbly & melted. 

8. Once the pizza looks cooked, take out of the oven and sprinkle the chopped kale on top (it will burn quickly if put in the oven).

9. Cut into 9 or 12 pieces (depending on how big you like your slices) and ENJOY!

 


A few notes:

  • We ate ours with forks and knives, its not like a true pizza crust... be warned. But, other than that - it was extremely tasty!

  • You can add whatever toppings you'd like, it will taste great with anything! I personally think it will be great as a BBQ Chicken Pizza.
